Edwards appeared Kurt Benson in Channel 4's soap opera Hollyoaks, a role he portrayed from 1995 to 1999 before appearing in the BBC medical drama Holby City, in which he played Danny Shaughnessy from 1999 to 2003. Edwards appeared on Lily Savage's Blankety Blank in 2001. Edwards appeared in the third series of Celebrity Big Brother in January 2005, where he placed fourth in fourth place.

On January 2007, Jeremy co-presented Coronation Street/Emmerdale Confidential with Terri Dwyer (who played the wife of Edwards' character in Hollyoaks). Fraser, an armed police inspector, appeared in the ITV soap opera Emmerdale on February 12, 2008. He appeared on Dancing On Ice's fourth series in 2009, partnered with Darya Nucci. They were the third couple to be voted out of office, with the fewest public votes in both weeks he appeared.

He appeared on Angela Griffin's daytime talk show Angela and Friends in November 2009. Edwards appeared on Channel 5 morning's The Wright Stuff as a regular panelist. He returned to Hollyoaks in 2013 as a guardian angel for Tony Hutchinson (Nick Pickard).

He has appeared in many pantomimes, most notably in Aladdin at The Hazlitt in Maidstone in 2011. In 2013, then appeared in Dick Whittington at The Harlington, in Fleet, Hampshire. He appeared on the CBBC's Millie Inbetween as Mike from 2014 to 2018. In addition, he appeared in Hacker Time's fifth season. In October 2019, he appeared on the ITV series The X Factor: Celebrity as part of a duo with Brendan Cole. In the auditions, they were disqualified. During the soap's 25th anniversary celebrations in October 2020, Edwards returned to Hollyoake as Kurt. He remained on the soap until December of that year. Edwards turned down when asked to return again, citing that negative remarks made about him on social media influenced his decision, but "never say never." He reiterated his possibility of returning in May 2021.

Edwards would appear in 2022 in the UK tour of Hilary Bonner's political thriller Dead Lies as Peter George. The tour ran from March to June 2022.
