Early life
Jennifer Lyon was born in Nevada but grew up in Washington and The Dalles, Oregon. She loved hiking, playing soccer, and photographing. Jennifer learned Spanish when she first started participating in the foreign exchange program in 1990. Jennifer spent a year in Spain and two years in London as a nanny after graduating from high school. Jennifer enrolled in Portland State University and spent a year there before being sent to Oregon State University before being sent to Oregon State University. She obtained a Bachelor of Science Degree in diet and food processing later in life.
