Hubert made her Broadway debut in 1981, in the cast of The First, a short-lived musical about Jackie Robinson, after appearing in Dancin's national tour. Hubert played Tantomile in the original Broadway production of Cats, as well as understudied Grizabella and Demeter. In April 1983, she left Cats to appear in Sophisticated Ladies, opposite Dee Dee Bridgewater and Gregg Burge. Hubert appeared on Aunt Viv on The Fresh Prince of Bel-Air, the role she is best known for. Hubert's character was recast and performed by Daphne Maxwell Reid for the remainder of the show's run after she was reportedly dismissed by the show's creators. Hubert "brought her problems to work" and wanted to be the show's star at the time, according to Will Smith, the show's actor. Smith had gotten her fired, according to Hubert.

In a 2002 episode of Friends as Chandler's boss, Hubert appeared. Lisa Williamson, mother of attorney Evangeline Williamson, appeared on One Life to Live in 2005. In November 2020, Hubert appeared in The Fresh Prince of Bel-Air Reunion on HBO Max. She and Smith spoke privately for the first time since being dismissed from the program. More details and context were given regarding the situation and her departure. Hubert addressed topics in her personal life, including her child, and that she had not been fired from the show for the fourth season in a bid she turned down; she was told a "poor deal" to return for the fourth season. Smith referred to how he was neither "sensitive" nor "perceptive" to Hubert's situation, and that he was still young and immature at the time. However, being a parent now, she has taught him how to figure out what she was dealing with. Smith told Hubert that he wishes he had behaved differently and apologized for his conduct. In the end, the two seemed to be reconcile. At the reunion, Hubert rejoined the majority of the guests.
