Rimmer trained himself to cook after studying fashion and textile design. He bought Greens, a vegetarian restaurant in West Didsbury, in 1990. Earle opened in Hale in October 2006, but it was sold to a local restaurateur in 2016. Rimmer served as a judge for British Sausage Week in 2013, assisting in the selection of the winners and promoting the festival.

Rimmer's television career began with Granada Breeze before appearing regularly on programs such as This Morning, The One Show, and Pointless Celebrities. Making a Meal of It, Win It, Cook It, Restaurant Trade, Eat the Week with Iceland & Secrets of Our Favorite Snacks for Channel 4 and Breaking Into Tesco for Channel 5 & Breaking Into Tesco For Channel 4, He has presented Making a Meal of It. Rimmer is, however, best known for his co-working with Tim Lovejoy, with whom he hosted Something for the Weekend on BBC Two between 2006 and 2012, a show on Channel 4 in a similar vein.

Rimmer has also appeared on various television shows as a contestant. On the first series of Great British Menu, he pitted his culinary skills against other experienced chefs; losing in the heat in the North of England to Marcus Wareing. He appeared on Celebrity Mastermind in 2008, selecting "The History of Tranmere Rovers" as a special interest. In August 2017, Rimmer would be the protagonist of Strictly Come Dancing's fifteenth series, partnering with Karen Clifton. In week six, the two were eliminated.

The Accidental Vegetarian, Rimmer's first book, was released in October 2004. Rebel Cook Cook's second book, Rebel Cook, was published in October 2006. Lazy Brunch, his third book, came out in spring 2008, co-written with Lovejoy and based on a feature in Something from the Weekend. Rimmer's fourth book, The Seasoned Vegetarian, was published in spring 2009.

Sacha Lord (pictured), the Night Life Economy Adviser for Greater Manchester, said the decline in young Brits going on nights out can be attributed to their increasing desire to look good online. Earlier this year, it was revealed that 1,110 bars and clubs have shut in London since Covid and countless others are hampered by curtailed drinking hours, threats from housing developers and rising costs. Mr Lord, 52, claimed that young people don't want to be seen on social media with 'ketchup down your chin when you've had a kebab at the end of the night'. Instead, showing off new clothes online and going to the gym is the 'new going out'. Mr Lord, a Mancunian, who is the creator of Manchester festival Parklife and dance music venue The Warehouse Project, was appointed as Greater Manchester's first ever Night time Economy Adviser by Mayor Andy Burnham .
