Gibbs' rap career began in 2004, self-releasing his first full-length project, Full Metal Jackit, which was followed by a sequel the same year. He was signed to Interscope Records and began recording his debut studio album around the same time, but he was dropped from the label in late 2006, when the man who signed him, Joe Weinberger, left the company in late 2006. In August 2010, Gibbs debuted Str8 Killa, his debut extended play Str8 Killa.

He will continue self-releasing mixtapes until 2011, when he signed to Young Jeezy's CTE World. Gibbs revealed on his website in February that he joined up with fellow rappers King Chip and The Cool Kids to form the ultragroup Pulled Over by the Cops. He released the mixtape Cold Day in Hell in October, which featured guest appearances from Young Jeezy, Juicy J, and 2 Chainz, among other things. The mixtape received a lot of attention from magazines including Pitchfork and XXL, as well as the latter's Freshman List Class of 2010. In September 2011, and June 2012, respectively, Gibbs and hip hop producer Madlib's first and second extended plays, Thuggin' and Shame, were released. The EPs served as previews for their forthcoming collaborative album, which was originally named Cocaine Piata but later renamed to Piata.

Gibbs revealed that his next mixtape would be titled Baby Face Killa, shortly after the debut of Cold Day in Hell. It was announced on September 25, 2012, and featured guest appearances from Pharrell Williams, Jadakiss, Jay Rock, Currensy, YG, and others. On Grand Theft Auto V's virtual in-game radio station Radio Los Santos, the second track from the album, "Still Livin'," was included.

Gibbs revealed on December 11, 2012, that he was no longer a member of Young Jeezy's CTE group. He continued by insisting that there are no beef between the two rappers. Freddie Gibbs announced on May 27, 2013 that he would debut his debut album ESGN (Evil Seeds Grow Naturally) on July 9, 2013. He has a new record label under the same name. Due to a leak, the album was delayed until June 20, three weeks before the intended launch date.

Freddie Gibbs and Madlib debuted Deeper, the final EP from the Piata previews trilogy, in September 2013. Piata's actual release date was revealed on March 18, 2014. On the review website Metacritic, the album received universal praise from music critics with a score of 82. On the US Billboard 200 and number seven on the US Top Rap Albums charts, it reached number 39 and number seven. Gibbs, Young Thug, and ASAP Ferg all launched a single called "Old English" on July 1, 2014. The Recording Industry Association of America (RIAA) acknowledged it on July 23, 2020 for producing over 500,000 certified units. Gibbs and Madlib's fourth EP, titled Knicks, was released in October 2014 (Remix).

Gibbs' Pronto EP, which was followed by his second solo studio album, Shadow of a Doubt, which was released on November 20, 2015. You Only Live 2wice, Gibbs' third solo studio album, was released in March 2017. "Crushed Glass," Eric Nelson's sole single, was released simultaneously with a music video directed by Eric Nelson. He unveiled his fourth studio album, Freddie, in June 2018.

Piata, Gibbs, and Madlib revealed in May 2016 that they were working on their second joint album after the success of Piata, Gibbs, and Madlib. The resultant project, Bandana, was released in June 2019. Two singles preceded Bandana: "Flat Tummy Tea" and "Bandana," the latter starring the dancehall artist Assassin. Both singles were released in February and March 2019. Keep Cool Records, RCA Records, Madlib Invazion, and ESGN have all issued Bandana, and the public has lauded it.

Gibbs has also worked with producer The Alchemist on several projects. Fetti, a collaborative album starring Gibbs, The Alchemist, and rapper Currensy, was their first project together. Fetti was first announced in October 2018. Gibbs and The Alchemist joined forces in May 2020 to debut Alfredo, a second collaborative album. Alfredo's lead single, "1985", was released a day earlier, as well as a accompanying music video directed by Nick Walker. Gibbs' and The Alchemist's highest-charting album to date made the album debut on the Billboard 200, making it both Gibbs' and The Alchemist's top-charting album to date. At the 63rd Annual Grammy Awards, it was highly lauded and nominated for a Grammy Award for Best Rap Album.

Gibbs joined Warner Records in June 2020. Gibbs released three singles through the brand: "4 Thangs" featuring fellow rapper Big Sean and hip hop producer Hit-Boy; "Gang Signs" featuring fellow rapper Schoolboy Q; and "Big Boss Rabbit," among other rappers. In September 2022, Gibbs released his first album on Warner and his fifth overall solo album, Soul Sold Separately.

Gibbs appeared in the first season of the Starz drama series Power Book IV: Force in March 2022, in addition to his musical endeavors. Cousin Buddy, a cross-eyed drug dealer, was portrayed by the actor.
