She moved to Manhattan and worked in Winston & Strawn's litigation group after graduating from law school in 1997. She moved to London in 2001 and began writing full time. The first young adult book, Lily Holding True, was rejected by eight publishers. Giffin started a new book, then titled Rolling the Dice, which became the best-selling book Something Borrowed, which attracted critical praise and made it to the New York Times bestsellers list.

Giffin found an agent in 2002 and signed a two-book contract with St. Martin's Press. When doing revisions on Something Borrowed, she became inspired for a sequel, Something Blue (2005). Baby Proof, her third book, made its debut in 2006. Love the One You're With was her fourth book, which she published in 2007.

Nine of her books have been international bestsellers. On USA Today's Top 150 list, three of the three celebrities appeared simultaneously. Something Borrowed was turned into a big movie film (on May 6, 2011), and its sequel book, Something Blue, has also been optioned for film.
