Career

Purchese joined the Savoy Hotel's pastry kitchen in 1997 and spent under pastry chef William Curley in the main pastry department, bakery, and River Restaurant. He rose to the position of senior pastry chef before being transferred to the Goring Hotel in 2000 as head pastry chef. In 2002, he moved to Raffles Brown's Hotel in Mayfair, as the pastry chef of a '1837' restaurant, where he stayed until 2003. He then transferred to the Bentley Hotel in Knightsbridge as executive pastry chef. He received an Acorn Award from the magazine Caterer and Hotelkeeper for the most promising people under the age of 30 in the UK hospitality industry during his time at Bentley.

Purchese was invited to speak at The Brisbane Masterclass Weekend in Brisbane, Australia, in 2004 while working in London. Cath Claringbold, a Melbourne chef and restaurateur, met Purchese here. Purchese returned to Australia, this time to Melbourne, in 2005, where he began as the head pastry chef at Shannon Bennett's Vue de monde restaurant. In The Age Good Food Guide and Best Restaurant in the Gourmet Traveller Magazine, Purchese's time at Vue de monde earned the restaurant '3 Chef's Hats.' In the newly opened Cafe Vue and Bistro Vue companies, Purchese also oversaw the pastry department.

Purchese has also served as pastry chef at Gary Mehigan's then restaurant Fenix, as well as pastry chef at Bennelong Restaurant, which is located in the historic Sydney Opera House. Purchese has also worked as a pastry chef consultant to many high-end restaurants and food franchises, most notably for George Calombaris at his The Press Club restaurant.

Purchese has performed two Masterclasses at many Australian food shows and festivals, as well as two others. Purchese held a Masterclass at the 2012 Crave Sydney food festival alongside internationally renowned chefs such as Antonio Carluccio, Jordi Roca, Christina Tosi, Massimo Bottura, and Jason Atherton.

Purchese's first venture, Burch & Purchese Sweet Studio, opened on Melbourne's shopping, dining, and entertainment precinct Chapel Street in April 2011. Sweet Studio is mainly a retail store that produces cakes and desserts of various shapes and sizes.

On Chapel Street, B&P also serves coffee and has outdoor seating. Darren and his partner Cath's company is the sole proprietor and manager of the company. In the studio, cooking demonstrations, dining, and tastings have also taken place.

Darren has been on Australian television regularly, most notable on Masterchef Australia, where he has hosted a Masterclass against eventual winner Kate Bracks in series 2 as a guest judge and as guest chef on a Pressure Test episode in series 5. Purchese has appeared in episodes of MasterChef Australia All-Stars and Masterchef Australia: The Professionals. In series 7, where the contestants had to make his Passion flower, he had set a pressure test. He set up a massive off-site challenge where the two teams had to produce edible art inspired by Darren's work.

Darren was also a regular chef host on Network Ten's The Circle and Scope. On SBS, Nine Network Seven, and the ABC, he has appeared on numerous travel and lifestyle shows. In 2015, Darren appeared in a cameo role in the television series Neighbours.
