Early life
Tibballs was born in Leongatha, Victoria, to parents Christine and Allan, and they grew up in Pearcedale. Tibballs have always had an interest in pastry; baking and entering cake-making and pastry categories in the Dandenong Show at the age of 12. Tibballs began her apprenticeship at a small patisserie in Mornington. Tibballs joined Sheraton Towers Hotel in Melbourne as a commis pastry chef at 20 years old. Tibballs won the National Australian Baking Scholarship Award two years ago, which enabled Tibballs to work in Europe with pastry chefs in Brussels and Paris.

Career
Tibballs is a spokesperson for both the Bulla Family Dairy and the Belgian chocolate brand Callebaut.
Tibballs founded Savour Chocolate and Patisserie School in 2002. Tibballs referred to the local Australian market as "lagging" relative to the European market, and so wanted to open an institution that could provide the necessary funds for Australian pastry chefs who could not afford to travel to Europe. Chocolate and patisserie are taught at the university.
Mix n' Make, Tibballs' first app, was released in June 2017. The game's aim is to create unique recipes and flavor combinations for éclairs, tarts, and macarons. The user will then download a recipe book of their own creations.
