Alexis Pascal Gauthier (born 24 June 1973) is a French chef.

He is the chef patron of the Gauthier Soho restaurant in Soho, London and was awarded a Michelin star in 2011.

He previously held a Michelin star as head chef of the restaurant Roussillon in Pimlico, London, until 2010.

He trained under Alain Ducasse at Le Louis XV in Monaco, and has appeared as a judge on two versions of the BBC One television show MasterChef.

Personal life

Career

He began working in a restaurant for the first time in 1991 at the Hotel Negresco in Nice, France. He went to work under Alain Ducasse at his Le Louis XV restaurant in Monaco between 1993 and 1996. He left Ducasse's job to join Roussillon in Pimlico, London, which opened in 1998 with Gauthier as the head chef. The restaurant had previously known as Marabel's, but after Gauthier's arrival, it was relaunched. It was named a Michelin star in 2000. In both 2000 and 2001, it received three AA Rosettes and the Time Out "Best Vegetarian Award" Award.

Gauthier removed chicken, pigeon, and foie gras from Roussillon's menu during the Bird Flu pandemic in 2005 after he noticed a decrease in demand. Gauthier left Roussillon in 2010 to open Gauthier Soho, a new restaurant that had been looking for a new location to open his own restaurant because he wanted to move away from his two business partners. Gauthier retained a part of Roussillon's ownership. Roussillon lost its Michelin star and went on to pass through two chefs before finally closing on June 1, 2012. Gauthier, a manufacturer, told the industry news that he hoped to buy back the building after it closed.

Gauthier Soho was installed in the space previously occupied by the Richard Corrigan restaurant Lindsay House. The location's complete renovation included the conversion of the ground floor into a wine shop, as part of his takeover. Gauthier and sommelier Roberto della Pietra formed a joint venture in the new restaurant. The new restaurant was also named a Michelin star a year after its opening.

When Gauthier was not dining at the restaurant DuckSoup, Matthew Norman of The Daily Telegraph and Tracey MacLeod from The Independent was seated at a table near to food critics Matthew Norman from The Daily Telegraph and Tracey MacLeod. MacLeod had previously given Gauthier Soho a critical review, but Norman had given the restaurant the highest praise in Gauthier's opinion. Gauthier outlined the food critics' behavior to his followers while sitting outside, by MacLeod's feet, and that Norman was unaware of what aioli was. Gauthier said later that it was "nothing personal" and that the critics were outraged, with Norman saying, "I am very loud in restaurants because I am a little hard of hearing."

Gauthier doesn't believe in timers or pre-weighing food to determine cooking time. Rather, as he has demonstrated in his television appearances, he relies on touching food to determine whether or not it is cooked. He also likes to feature vegetables in his cooking, saying that "if they have the right texture, you can enjoy vegetables such as meat or fish." Though he'll create a vegetarian menu on request, Gauthier Soho's vegetarian tasting menu would feature meat products such as a meat au jus in the preparation of the vegetables.

Gauthier converted his vegetable menu to be entirely vegan in 2015. At the PETA Food Awards 2016, Les Plantes' menu went on to win the 'Best Vegan Menu.' Gauthier went vegan in 2016; he is now opposed to meat's "savagery" and is "excited about a vegan future." He's changing his restaurants to be entirely plant-based.

In October 2009, he appeared on BBC One's MasterChef: The Professionals, alongside Gregg Wallace and Michel Roux Jr. He appeared on the regular MasterChef series again with Wallace, as well as with John Torode in March 2011 and March 2019.

The King ruled that the food was removed from his royal residences as Prince of Wales in 2008, when he told chefs at Clarence House not to use it. Though gastronomics laud the product's rich flavor, many people find the manufacturing process, which involves force-feeding ducks or geese, until their livers burst.
