Professional career
Carroll started working in Australia in 2012. He returned home to Dublin, where he started fighting under Paschal "Packie" Collins, a member of Celtic Warrior Gym, Blanchardstown, after a 2–0 record.
Carroll made his Irish professional debut in November 2014 when he met Declan Geraghty at the 3Arena. Promoter Eddie Hearn announced that the winner of Matthew Macklin's undercard match against Jorge Sebastian Heiland would receive a slot at the Prizefighter tournament in London the following month. Carroll and Geraghty produced 'Fight of the Night,' in a contest that came to an end in the fourth round when Geraghty was disqualified for continued use of the head, but the same fight would continue to the year's best Irish fight.
Carroll came into the limelight in December when he accepted the invitation and became the Prizefighter champion. When the Dubliner defied the odds to defeat Stephen Foster, Gary Buckland, and Michael Devine to win the lightweight title, he was a relative unknown to British audiences. Carroll also agreed to a sponsorship contract with Eddie Hearn and Matchroom Sport later this year.
Carroll, despite being scheduled to appear on Spike O'Sullivan's undercard, vs. Chris Eubank Jr., Jr., received a different fight just a week's notice. Carroll, a ten rounder with Miguel Gonzalez, agreed to the longest bout of his career so far. Despite the timing, Carroll outclassed the Honduran from start to finish, winning every round on the way to a unanimous decision win. "I just went out there and enjoyed myself," he told Sky Sports afterwards. "I never participated in ten rounds, so I wanted to see what it was all about." I wanted to get through without having to get to the hospital. I'm pretty proud of it."
Carroll defeated former world champion Scott Quigg on March 7, 2020. Carroll dominated Quigg throughout the whole match and won the TKO over in the eleventh round.
Carroll defeated Maxi Hughes in his next match. Though Carroll was a big favorite, Hughes was able to barely outbox Carroll and win the game in a big surprise by unanimous vote.
Carroll defeated Andy Vences on September 11, 2021, then ranked #7 in super featherweight by the WBA, rising to the top 10 in the WBA. Carroll was able to win by majority vote, with the scorecards showing 97-93, 97-93, and 95-95 in his favour.
