Professional career

Jones was drafted by the New York Giants in the first round with the sixth overall pick in the 2019 NFL Draft. Jones signed his four-year rookie deal worth $25.64 million, as well as a $16.7 million signing bonus on July 22, 2019.

Despite a stellar preseason, Jones was named the back-up behind Eli Manning. Jones started his regular season against the Dallas Cowboys on September 8, 2019, in lieu of Manning's relief, where he had three-of-4 passes for 17 yards and lost a fumble as the Giants lost 35–17. Jones was selected starter over Manning for the Week 3 match against the Tampa Bay Buccaneers on September 17, 2019. Jones scored 23 out of 36 passing yards with a 112.7 passer rating and two running touchdowns, as well as 28 running yards and two running touchdowns in a 32-31 victory over the Buccaneers in his first appearance. He became the first Giants rookie quarterback to win his first career start since Scott Brunner in 1980. Jones led the Giants from an 18-point deficit to defeat the Buccaneers and become the seventh rookie quarterback in NFL history since 2010 to have a game-winning drive in their first career appearance. For his appearance in Week 3, he was also named NFC Offensive Player of the Week.

Jones led the Giants to a 24–3 victory over the Washington Redskins on September 29, his second start (and first home opener). Jones became the third quarterback in the Giants' history after Phil Simms (1979) and Travis Tidwell (1950) began their careers as a starting quarterback for the franchise.

Jones ran for an impressive 80 yards on a single play in Week 7 against the Philadelphia Eagles in the third quarter before losing his balance and tripping near the endzone. Despite the trip, this rush became the longest run in Giants quarterback history. Jones reached a top speed of 21.23 mph (34.17 km/h), the fastest by an NFL quarterback since 2018 (Lamar Jackson). During Week 10 against the Philadelphia Eagles, Jones threw for 244 yards and 64 yards, including a 34-yard rushing touchdown.

Jones strained his hamstring against the Cincinnati Bengals in the third quarter of Week 12, causing him to miss the remainder of the game and the following game against the Seattle Seahawks. After suffering an ankle injury against the Arizona Cardinals the week before, he missed Week 15 against the Cleveland Browns.

Jones had one of his best performances of his young career in Week 17, scoring 17 for 229 yards, 2 touchdowns, and an interception in a 23-19 victory. Jones was also responsible for the Giants' demise on the track in order to force a jet sweep touchdown to Sterling Shepard. This was also the first time the Giants had defeated the Cowboys since the 2016 season, and the Giants also had their best record since the 2016 season. The Giants finished the season 6-10, but missed the playoffs for the fourth year in a row after beating the Philadelphia Eagles later in the day.

Jones started throwing for 267 yards, one touchdown, running for 27 yards and an additional touchdown, and fumbled once more in a 27-13 loss to the Denver Broncos. Jones was named NFC Offensive Player of the Week as a result of his play. Jones threw for 203 yards, one touchdown, zero interceptions, and rushed for 28 yards, his first career reception against the Carolina Panthers, despite losing by Dante Pettis for 16 yards in Week 7.

Jones sustained a neck injury in Week 12 against the Philadelphia Eagles, causing him to miss the remainder of the season. Jones was placed on injured reserve on December 20, 2021, 2021.

The Giants' fifth-year option for 2023 was denied in April 2022.
