Carpenter was discovered by a corporate agent at waiting tables in Los Angeles to save money for her college education. This culminated in her appearances on stage and more than 20 commercials. She appeared in a Baywatch episode for the first time in 1994. She debuted in the NBC short-lived teen drama/soap opera series Malibu Shores, just a few years after.

Carpenter tried for the title role in Buffy the Vampire Slayer on the WB, but instead, Cordelia Chase, a snobby and well-known high school student, was cast. Carpenter was given a larger role on Buffy the Vampire Slayer's spin-off series Angel after three seasons as the same character on the spin-off film Angel, alongside David Boreanaz. On Angel, she appeared Cordelia Chase for four seasons. Although her character appeared in Angel's fourth season, Carpenter appeared in the 100th episode of the fifth and final season.

Carpenter appeared in three episodes of The WB's Charmed as a psychic demon named Kyra for three episodes and was a regular participant in NBC's Miss Match, appearing in four episodes. Kendall Casablancas appeared in 11 episodes in the UPN mystery drama series Veronica Mars from 2005 to 2006. Carpenter appeared in the ABC Family comedy-drama series Greek in the first season finale, as well as two episodes of Season 2. In September 2007, she had intended to be a member of The Apprentice: Celebrity Edition, but instead she chose to do a guest appearance in the Fox comedy series Back to You, as well as a two-episo on the short-lived version Big Shots. Carpenter appeared on "The Descent of Man," a CSI: Crime Scene Investigation episode in April 2009.

Buffy the Vampire Slayer reunion took place on March 20, 2008, at Paley Fest. Carpenter attended the performance alongside Buffy creator Joss Whedon, creator Marti Noxon, and David Greenwalt, as well as other Buffy alumni, including Sarah Michelle Gellar, Nicholas Brendon, James Marsters, Emma Caulfield, Seth Greenwood, and Michelle Trachtenberg.

Carpenter has appeared in a number of made-for-TV and direct-to-video films, including the sex comedy What Boys Like, the horror film Voodoo Moon, and the romantic comedies See Jane Date and Relative Chaos on ABC Family (the former of which co-starred Buffy co-alum Nicholas Brendon). She appeared in the original films Flirting with Danger and Cheaters' Club (both 2006), as well as her guest spot in Legend of the Seeker, at Lifetime and the Syfy original film House of Bones.

Carpenter appeared in Red Sparrow's first film, Psychosis, which was released on January 11, 2011. She appeared in The Expendables of Sylvester Stallone in August 2010. Carpenter was cast in Human Factor and in the indie thriller Crash Site after the success of The Expendables. She appeared in an episode of the seventh season of Supernatural starring Buffy co-star James Marsters. Carpenter appeared in the ABC Family drama series The Lying Game's first season in 2012, as Rebecca Sewell. For the second season, she was relegated to a series regular. Lacy in The Expendables 2 later this year reprised her role as Lacy.

Surviving Evil (original working title: I Survived Evil) premiered on Investigation Discovery on August 28, 2013 with Carpenter as host; in the first episode, Carpenter herself was featured as a crime survivor, recalling the horrific rapist and police officer Henry Hubbard Jr.'s violent serial rapist and police officer's murderer on San Diego's Torrey Pines State Beach in 1991. Bound, a 2015 erotic film starring Morgan Obenreder, received a lukewarm reception. She appeared in the television series Mommy's Secret later in life.

Carpenter screamed out in favour of Ray Fisher, who also claimed to have suffered from a hostile environment at the hands of the director in February 2021.
