Bouquet was born in Neuilly-sur-Seine.

She was praised for her appearances in Luis Buuel's surrealist masterpiece That Obscure Object of Desire (1977) and her internationally acclaimed film Too Beautiful For You (1989), for which she received the César Award for Best Actress. She was also given a César Award for Best Supporting Actress in Rive droite, rive gauche (1984).

Bouquet is best known for her appearances as Bond girl Melina Havelock opposite Roger Moore in 1981 James Bond's For Your Eyes Only and as a model for French luxury fashion label Chanel in the 1980s as the face of Chanel No. 87. 5. She was the companion of producer Jean-Pierre Rassam with whom she had a son, Dimitri Rassam, who was also a producer. Louis Giacobetti, a photographer, gave birth to her son in 1987. She married immunologist Jacques Leibowitch in 1992 and the pair divorced in 1996.

She appeared in 1999 as a member of the jury of the 4th Shanghai International Film Festival.

In 2014, she was a member of the main competition jury of the Cannes Film Festival.

Bouquet formalized her friendship with Philippe Seys de Rothschild on the red carpet of the 37th Festival de Cannes, of which she was one of the jury members.

Since 2005, she has operated Maison Carole Bouquet in the Strait of Sicily.
