Tetsuya Wakuda OAM (born June 18, 1959) is a Japanese-born Australian chef based in Sydney, Australia.
In the final episode of Junior MasterChef Australia's second season, he also appeared as the leading judge.
Early life
Tetsuya Wakuda was born in Nagamatsu, Japan, on June 18, 1959. Wakuda was on his first trip to Australia at the age of 22.
In 1983, Wakuda met Tony Bilson (later head chef of Bilson's restaurant), who then offered him a job as a sushi chef at Kinsela's in Taylor Square. Wakuda's classical French techniques that underpin much of Wakuda's Japanese-French fusion cooking, according to Bilson. "I realized I wanted to, and discovered I could cook," Wakuda says of his time at Kinsela's. I started learning classical French techniques there. Along the way, I made up a few items, and, fortunately for me, people loved the way it tasted."
Wakuda left Kinsela in 1983 and opened Rose's nightclub, where Wakuda spent a year as a chef. He was introduced to chef Hans Mohr by late restaurateur Anders Ousback after leaving. For six months, he served as a second chef with Mohr.
Wakuda and his wife decided to open a new restaurant of his own. He selected a tiny shopfront in Rozelle's suburb.
