Sims was sent by a few modeling companies to Next Models Management in New York City, where she was in contract with Next Models Management.
She appeared on the front pages of Vogue Spain's April 1997 issue and Vogue Paris' September 1999 issue. Sims became Old Navy's official spokesmodel in 2001, appearing in ads with the tag line "You gotta have this look!" Sims walked the runway at the annual Victoria's Secret Fashion Show in 2001, and the following year, she started a multi-year contract with CoverGirl. She has also appeared on the runway for Veronique Leroy, Jerome L'Huillier, Givenchy, Ann Dememeester, Emanuel Ungaro, and Emanuel Ungaro.
