Jaffe began his career as a child actor, appearing in films like Mr. The Year We Make Contact (Mumford) vs. 2010: The Year We Make Contact He didn't like being a child actor after six years. After a poor audition, his father told him he should either work harder for more roles or leave acting altogether, and Jaffe—having not yet understood that quitting was a possibility—immediately decided to resign. He returned to acting in games a few years later, as a voice actor for the dubbing anime in 2000. Since then, he has appeared on screen in House MD and House of Demons.

He played Perpetual "Perception" Fredrickstein de Rolo III in Campaign One, Mollymauk Tealeaf, Caduceus Clay, and Kingsley Tealeaf in Campaign Two, and Ashton Greymoore in Campaign Three. In the "Games (Video Series & Channels)" category at the 2019 Webby Awards, Critical Role was both the Webby Award Laureate and the People's Voice winner; the show was also the Audience Honor Winner in the "Games" category. The show was originally broadcast on the Geek & Sundry network until early 2019, when the cast and crews left to establish Critical Role Productions, their own production company. They planned to raise $750,000 on Kickstarter to create an animated series of their first campaign, but they wound up raising over $11 million. In November 2019, Amazon Prime Video purchased the streaming rights to the animated series The Legend of Vox Machina; Jaffe reprised his role as Percy.
