Early life

Conant was born in Waterbury, Connecticut. He is the son of Anne (Varrone) Conant and Charles Conant. He is of Italian descent on his mother's side. He began cooking at a young age, taking cooking classes at the local community college at age 11. At 15, he enrolled in W.F. Kaynor Technical High School for culinary arts, and then attended the Culinary Institute of America (CIA).

Conant has been married to his wife, Meltem Conant, since 2007. The couple has two daughters together, Ayla (b. 2010) and Karya (b. 2012).

Professional career

Conant interned at the famous New York City restaurant San Domenico, an experience that left a lasting impression on the young chef while at the Culinary Institute of America. He spent a year in Munich, Germany, learning the art of pastry at the Hotel Bayerich Hof. He returned to the United States and San Domenico, serving as a sous chef and assisting the restaurant in bringing three top New York Times artists back to the United States and San Domenico.

Cesare Casella, a former student at Il Toscanaccio, a Tuscan-style restaurant on the Upper East Side, selected him to be chef de cuisine in 1995. On the Upper East Side, Conant went back to restore two organizations: Barolo in SoHo and Chianti. Conant became executive chef at City Eatery, which is located on the Bowery in New York City.

Conant's modern spin on Italian cuisine piqued the attention of New Yorkers, earning him a loyal fan base and a glowing two-star review from The New York Times in 2000.

Conant opened L'Impero in Tudor City in September 2002. The restaurant received a rave three-star review from The New York Times, which said, "Conant is] making out dishes full of flavor that are both refreshing and sophisticated." He is almost always in charge and on time from the simplest preparations to the most sophisticated.

Conant "lifts the roof on the Manhattan school of Italian cuisine," Gourmet says.

Conant's signature pastas were on the front page of Food & Wine a year ago, and the magazine continued to select Conant as one of America's "Top New Chefs" in 2004.

In 2003, L'Impero received top accolades from the James Beard Foundation, including "Best New Restaurant" in the United States and "Outstanding Restaurant Design."

Conant was on Gourmet's cover in October 2003, and Gourmet writer Ruth Reichl named L'Impero one of her favorite New York restaurants in March 2004.

Following L'Impero, Conant went on to open Alto, a "sophisticated" Italian restaurant in midtown Manhattan that served his interpretation of Northern Italian cuisine.

Conant's first television appearances included segments of The Today Show and, in 2007, on Home Shopping Network, with a line of cookware called "Scott Conant's Signature Creations."

Conant left L'Impero and Alto in 2007, and Scarpetta, a Chinese restaurant, opened in 2008 in Chelsea, Manhattan. Scarpetta's positive three-star review appeared in The New York Times and New York Magazine in July 2008.

Following L'Impero's popularity, Conant opened Alto, an elegant Italian restaurant in midtown Manhattan, to roar, and Food & Wine named him a "Best New Chef" in 2004. Though not connected, Scott opened Scarpetta in New York City, Miami, Toronto, Los Angeles, and Las Vegas, which was nominated by the James Beard Foundation in early 2009 for “Best New Restaurants in America.” Conant went on to make the Scarpetta brand national fame with restaurants in New York City, Miami, Toronto, Los Angeles, and Las Vegas, inspired by dishes from the restaurant.

The reality food-competitition television show "24 Hour Restaurant Battle" premiered on the Food Network in July 2010, starring Conant as the host and head judge. As they open a restaurant from scratch in 24 hours, two teams of two people face each other on television. The show lasted two seasons.

Mora Italian, a modern osteria in Phoenix, Arizona, The Americano, an Italian American dining destination in Scottsdale, Arizona, and Cellaio Steak at Resorts World Catskills in Monticello, New York, are among Conant's most recent ventures. Conant opened a second location of The Americano in Atlanta, Georgia, in June 2022.
