Riegert made his Broadway debut in the musical Dance with Me. The Old Neighborhood, An American Daughter, The Nerd, and Censored Scenes From King Kong are among the Broadway credits. He has appeared in Road to Nirvana, The Birthday Party's, Isn't It Romantic, Sexual Perpetuation in Chicago, and A Rosen by Any Other Name.

In 1978's National Lampoon's Animal House, Riegert made his film debut. He has since appeared in films including Crossing Delancey, Local Hero, The Mask, Traffic, and We Bought a Zoo.

Riegert made his television debut in two episodes of M*S*H, as well as Newark Assemblyman and later New Jersey State Senator Ronald Zellman in The Sopranos and Defense Attorney Chauncey Zeirko in several episodes of Law & Order: Special Victims Unit. He appeared in Gypsy's television version and was also included in the HBO drama Barbarians at the Gate (which earned him an Emmy Award nomination for Outstanding Support Actor in a Miniseries or a Special). In addition, Jake Rubin (based on true-life composer Irving Berlin) in the 1984 miniseries Ellis Island, the last episode of Seinfeld as president of NBC and the television film Back When We Grown Ups. In the tense episode "When You Wish Upon a Weinstein" of Family Guy, Riegert portrayed Max Weinstein. Peter Blanchard, a corrupt prosecutor, appeared in a Season 2 episode of Leverage as corrupt lawyer Peter Blanchard. Riegert began a multi-episode arc on One Tree Hill in 2011 as August Kellerman, Nathan's unforgiving college professor. In Season 1 of Damages, Riegert appeared as George Moore. In CBS' The Good Wife, he appeared in a recurring role as Judge Harvey Winter. He appeared in Dads as David Sachs, Eli Sachs' father, portrayed by Seth Green. In seasons 3 and 4 of Unbreakable Kimmy Schmidt, Riegert appeared on several occasions. In the second half of Netflix's original comedy series Disjointed, he made a multi-episode guest appearance. Riegert made his screenwriting and directorial debuts with By Courier, based on a short story by O. Henry. It received an Academy Award for Best Live Action Short Film and was given the Festival Award for Best First Feature at the Marco Island Film Festival, earning him the Festival Award for Best First Feature at the Marco Island Film Festival.

Riegert produced and co-wrote King of the Corner, a 2004 film in which he also appeared alongside Isabella Rossellini. Eric Bogosian, Dominic Chianese, Beverly D'Angelo, and Rita Moreno appeared in the film as well.

Riegert narrated Michael Chabon's The Yiddish Policemen's Union, which was nominated for the Audie Award in literary fiction in 2008. He also narrated The Voyage of the Narwhal's audiobook and has read Raymond Carver's stories.
