Marcus Wareing (born 29 June 1970) is an English celebrity chef who is currently Head Chef Patron of Marcus, (formerly Marcus Wareing at the Berkeley) in Knightsbridge.

In Seven Dials, London, as a restaurateur, he also runs The Gilbert Scott at the St. Pancras Renaissance Hotel and his West End restaurant, Tredwells. Wareing succeeded Michel Roux Jr. as a judge in the seventh series of MasterChef: The Professionals.

Early life

In 1970, wareing began in Southport, Merseyside. His father, a fruit and potato farmer, had agreements with schools to supply their produce for school dinners.

At the age of 11, he was with his father, packing potatoes, and riding alongside deliveries. He was paid 10p per 5 pounds (2.3 kg) per bag of potatoes, all of which went into his Post Office savings account. Wareing was informed by his father that the operation was no longer profitable as schools transitioned to using pre-prepared frozen food instead of fresh produce at a young age. Later on, he would remember that his father's long hours as a pillar of his own work ethic.

He discovered he had a natural gift for cooking at Stanley High School. He continued to Southport College, where he took a three-year City & Guilds course in catering.

Personal life

Brian, a catering tutor, has a brother named Brian. Marcus is married to Jane, with three children, Jake, Archie, and Jessie. He met Jane while he was second chef at Gravetye Manor, where he was the second chef and she served on reception. Wareing continued the friendship by commuting out to Sussex every Sunday, after moving to London to work with Ramsay at Aubergine. Ramsay was the best man at his wedding in 2000 and is the godfather to Wareing's eldest son Jake.

When he was at the Taste of London festival and in 2012, he competed in a white-collar boxing charity competition for the Hilton in the Community Foundation, having been an amateur boxer in his youth. He has donated his name to the Environmental Justice Foundation's campaign to promote sustainable fishing. Wareing has claimed that his all-time cookbook is one by chef Daniel Humm at Eleven Madison Park in New York City.

Career

Wareing first served at the Savoy Hotel under chef Anton Edelmann's name in 1988, when he first joined Albert Roux in 1993. Stints at other restaurants in New York City, Amsterdam, and Sussex's Gravetye Manor followed. Wareing joined Aubergine in 1993, where he became Head Chef Ramsay and went on to work with him over the next 15 years, culminating in Wareing being named Ramsay's protégé. Wareing was named Young Chef of the Year by the Restaurant Association in 1995 while he was at Aubergine.

Ramsay would later credit him with teaching him how to cook, referring to it as the "most significant time in my life." He left Aubergine for a year in 1995 to work with Daniel Boulud in America, and Guy Savoy in France. His return to the United Kingdom was also his first head chef position, for new restaurant L'Oranger, which had previously owned Aubergine, and had stakes held by both Wareing and Ramsay. When he was 21 years old, he became the first Michelin star as head chef at L'Oranger. Angela Hartnett was given her first job in a restaurant by the owner.

Following a fallout between Ramsay and A-Z Restaurants over Wareing's employment at L'Oranger, which resulted in Ramsay leaving Aubergine to open Restaurant Gordon Ramsay, Wareing followed suit by leaving L'Oranger, causing the restaurant to temporarily close. A-Z Restaurants opened legal proceedings against the pair, and Kamel Benamar, Wareing's former sous chef, was appointed as the new head chef. Ramsay and Wareing settled outside of court for A-Z. Wareing and Wareing worked together to open Pétrus in 1999, with Wareing as the head chef and managing the restaurant on behalf of Gordon Ramsay Holdings (GRH). The name derives from the French wine Pétrus, which was Ramsay's and Wareing's favorite. Wareing restored the Michelin star he had lost seven months after opening, with Pétrus being designated as a one-star restaurant seven months after opening.

In the same year that Wareing became Chef Patron of the Grill Room at the Savoy Hotel, the restaurant was upgraded to the Berkeley Hotel, where it was named Chef of the Year by Caterer and Hotelkeeper's Catey Awards. He was competing against Anton Edelmann, the hotel's former manager from the River Room. Rather than present a menu similar to Pétrus' French cuisine, Wareing decided to continue to serve British cuisine, which included his rendition of old menu items such as steak and kidney pudding and potted shrimps. Pétrus continued to be rewarded two Michelin stars and five AA Rosettes, while the Savoy Grill achieved its first Michelin star in the hotel's history in 2004.

Wareing opened Banquette, an American-style diner, and converted the former Pétrus location into La Fleur. In 2004, he was named Restaurateur of the Year by the Tatler Restaurant Awards, and Harden's restaurant guide named him as London's fourth best chef, although La Fleur closed due to problems with the site's lease. Pétrus' second Michelin star was named in 2007.

Following several months of rumors surrounding the restaurant, the Berkeley Hotel confirmed in May 2008 that it would be working with Wareing to open his first solo restaurant, and that Pétrus will take over Pétrus' lease from September 19th, 2008. Wareing had previously feared interference in the kitchen by GRH and wanted to come out from under Ramsay's shadow, but later admitted that he had orchestrated the situation so he could go out on his own. Ramsay and GRH's split resulted in a public court fight and feud between the two groups, which culminated in Wareing, where Ramsay left him bitter and dissatisfied; "half of me thinks he's a sad bastard, but the other half adores him." Ramsay continued to market himself as a celebrity chef who wasn't directly involved in the industry. Ramsay obtained the right to the Pétrus name and wareing issued a gag order pertaining to the situation, but Marcus Wareing at The Berkeley opened his restaurant Marcus Wareing. "If I never speak to him again for the remainder of my life, it won't bother me one bit." Ramsay said later in the conflict that he thinks Wareing "all the best." Wareing's self-named restaurant was named Time Out's Restaurant of the Year in 2010 and 2009 by Harden's guide to London in 2008 and 2009. The new Pétrus was unveiled at the Berkeley Hotel on 1 Kinnerton Street in Knightsbridge, just around the corner from the Berkeley Hotel. Ramsay later joked that Heston Blumenthal's new restaurant, Dinner by Heston Blumenthal, is just around the corner, and the three of them may "all have a fight in the street at four a.m."

Marcus Wareing Restaurants was first opened in 2008 by Marcus Wareing at The Berkeley. Since being enlarged and now has three restaurants, the company has diversified. Wareing was named as the year's best chef by GQ magazine in 2009. Wareing opened The Gilbert Scott, his second restaurant in the St. Pancras Renaissance Hotel in 2011. GRH had also applied to open a restaurant in the area, but Wareing's plan was turned down. Sir George Gilbert Scott, the hotel's architect, was named after the restaurant. Wareing believes in using small suppliers to create good quality, seasonal British food in his menus.

Marcus Wareing at the Berkeley reopened as Marcus after extensive renovations in 2014. Wareing opened Tredwells in Upper St Martin's Lane, Seven Dials, London, in September 2014, with Group Operations Director Chantelle Nicholson, who also took on the role of Chef Patron of Tredwells in June 2016. Chantelle and Wareing announced in August that Tredwells is now solely owned by Chantelle, and that he will have no further involvement. Wareing announced the natural closing of The Gilbert Scott in 2021 after a fruitful 10-year lease.

Wareing first appeared on television in Channel 4's 1999 documentary series Boiling Point, when he was Gordon Ramsay's sous chef. Beyond Boiling Point, the 2000 documentary Beyond Boiling Point chronicles his exile to Pétrus and the award of his first Michelin actor. In 2003, he was also selected as one of 13 chefs to recreate Leonardo da Vinci's The Last Supper. Wareing throws a brie across the air while standing in the place of Simon the Zealot from Leonardo's photographs, as shown on the work by John Reardon. Marcus Wareing and Simon Rimmer were the North of England in the BBC television series Great British Menu, which was released in 2006. Wareing defeated the Manchester-based chef to advance to the final round of the tournament. For the Queen's 80th birthday banquet on June 17, 2006, the public selected him to make his egg custard tart with Garibaldi biscuits.

He has served as a judge for the Great British Menu's later seasons, something that has occasionally brought him into conflict with one of the chefs' Johnnie Mountains. Although he has appeared on MasterChef, MasterChef: The Professionals, and Celebrity MasterChef, he has sluggishly, he has sluggishly.

After Roux, Jr.'s deal with the BBC was terminated for advertising potatoes, Wareing has replaced Michel Roux Jr. on his seventh series of MasterChef: The Professionals.

To date, wareing has published nine cookbooks. Marcus at Home in 2016, which spent five weeks in The Sunday Times top ten bestseller list (cookery books), and New Classics, which was released 2 November 2017, were among his new publishers, HarperCollins. Marcus Everyday was published on October 31, 2019, but Marcus' Kitchen, his most recent book, came out in October 2021.

Wareing announced a partnership with Compass Group UK & Ireland in August 2021. 'Forward with Marcus Wareing' is a new culinary curriculum that runs alongside a Level 4 Senior Culinary Chef or a Level 5 Operations Departmental Manager apprenticeship, which is offered in collaboration with HIT Training. Sustainability, inclusion, mental health, mentoring, and analysis of various leadership styles and results are among the target topics.
