Career

Hu modeled in Japan and Italy and became well-known in the latter as the protagonist of a string of television commercials for Philadelphia brand cream cheese, portraying a young Japanese college student named Kaori.

In 1993, Hu became the first Miss Hawaii USA state champion to win a Miss USA state championship. Hu won the preliminary interview competition and finished second and third in both swimsuit and evening gown in the 1993 Miss USA pageant, held in Wichita, Kansas. She then finished second in the top ten evening gown competition and second in swimsuit, winning the top ten evening gown competition and placing second in first. She was disqualified in fourth place after the judges' questions, just over a point from the final three.

Hu moved to Los Angeles and began her acting career in 1987, with a guest appearance on the comedy Growing Pains as Mike Seaver's Hawaiian love interest. Hu continued to appear on various television shows, including Night Court, Tour of Duty, 21 Jump Street, and Melrose Place. Jason Takes Manhattan, her first film role, appeared in Part VIII: Jason Takes Manhattan on Friday. In 1995, Hu appeared as an undercover police officer in the film No Way Back. In 1997, Hu was cast as Dr. Rae Chang on Sunset Beach. Michelle Chan was briefly cast as police officers in the television series Nash Bridges and Pei Pei "Grace" Chen on Martial Law, and Pei Pei Pei Pei Chen was shot on Martial Law. The Scorpion King (2002) and Cradle 2 the Grave (2003) were two of her film appearances. She appeared as Yuriko Oyama/Deathstrike, William Stryker's controlled partner, in X2 (2003).

Agent Mia Chen appeared on the last three episodes of the television series Threat Matrix in 2004. She appeared in Underclassman 2005, alongside Nick Cannon, and in 2006's Americane, Undoing, and Devil's Den. Stilletto was shot during the first quarter of 2007, followed by Farmhouse.

In January 2007, Hu began to appear on the television show In Case of Emergency full time. Kelly Lee, a Korean American woman who mistakenly reunites with her high school classmates but discovers none of them grew up due to their high school curriculum. After airing 12 episodes and leaving the show's season finale unaired, it was not a hit. The Air I Breathe and Shanghai Kiss were two of her films released in the same year.

Lai-Lai Zhen appeared in the film The Tournament in 2009 as Lai-Lai Zhen. Hu created JIA for Unknown Identities: The Asian American Superhero Anthology in April 2009. Lee Wuan Kai was the first guest actor to cross over between the television series NCIS: Los Angeles and NCIS, portraying Lee Wuan Kai in a two-episode arc within both series. Pearl, a vampire who appeared on the CW television series The Vampire Diaries in 2010, and 2011.

Huberto played a regular role on CBS television show Hawaii Five-0 in 2010. In 2012, Hu was cast in the role of Karai in the animated film Teenage Mutant Ninja Turtles. "It't really be the first time I played a ninja," she wrote. Yeah, I don't know why people think I'm stupid, but for some reason, I keep getting these roles for the ninja, assassination, bodyguard, and bad-girl version." Abigail Cho, the current owner of the Warehouse-connected B&B, appeared on Warehouse 13 in 2013.

She also appeared in video games, including Star Wars: Knights of the Old Republic II, and Batman: Origins as Lady Shiva, among the eight assassins hired by Black Mask to murder Batman (a role she reprised in the 2021 animated film Batman: Soul of the Dragon). In a personal first, she lent both her face and voice to Battlefield Hardline's in-game character Khai Minh Dao, who collaborated with the protagonist in roughly half of the game modes.

In Maxim magazine (May 2002 and May 2005), Hu was featured twice. She became the celebrity of Viagra in 2015 by appearing in the supermarkets.
