After being adopted at birth, Dawson grew up in Auckland, New Zealand. She dropped out of high school at age 16 to model in Europe and with Ford Models in New York City. A decade later, she moved to Australia, where she became a well-known model on Australia's fashion scene.

She began as the beauty and fashion editor for Woman's Day in 1997, and then became the style editor for New Idea magazine shortly after. She was the face of the Peter Morrissey fashion brand in 2000, presenting her own fashion segment for Good Morning Australia and appearing in the fashion section of Sydney's Olympic Games opening ceremony. She was Channel Ten's fashion reporter. Beauty and the Beast, as well as a regular panelist on the network's daytime show Beauty and the Beast, and Simply The Best on Burke's Backyard and Channel Nine's Simply The Greatest.

When working with Australian companies Cameron's and Priscilla's as an agent, she decided to try her hand at television. She joined Nine Network as a researcher and worked on projects such as Money and Looking Good. She became the network's Today editor, delivering weekly reports on local and international fashion news and events within the industry a few weeks after. Dawson's development was tracked by magazines like Vogue, Elle, She, Dolly, Cleo, and Mode, which also included her in fashion spreads.

She appeared on fashion shows as a "celebrity model" and was a guest fashion commentator for Nine's Wide World of Sports; she also appeared on The Footy Show on a daily basis, and appeared at numerous hosting and MC jobs at media functions.

Dawson returned to Auckland in 2002, where she appeared on TVNZ's chat show How's Life?, Prime Minister's Getaway, and Charlotte's Lists.

She then returned to Australia, where she served as a judge (and occasionally mentor to the models during challenges) on FOX8's Next Top Model from Season 3 to Season 8 in 2013. In 2008, she substituted for regular host Jodhi Meares for the live finale. Previously, Dawson hosted Runway to Los Angeles, a Foxtel series.

On the second season of The Celebrity Apprentice Australia, she appeared as one of the 'celebrity' contestants, raising funds for her chosen charity. Dawson's new period of mass media unrest began in August 2012 after she was interviewed in New Zealand's Herald on Sunday about her thoughts about her former home. "New Zealand is small, rough, and vindictive." It's a tiny, little village — a tiny country at the end of the world," she said.
